March 22, 2020 - dinner

For March 22, 2020 we will be preparing 3 giant lasagna pans of chili (2 veg, 1 non-veg). If made carefully the vegetarian chili should be both gluten free and vegan..

Ingredients for 3 giant pans of chili (2 veg and 1 non-veg):

  1. 3 lbs lean ground beef - 1
  2. medium onion - 12
  3. celery - one bunch 
  4. carrots - 2 lbs
  5. green peppers - 8
  6. garlic cloves - 8
  7. canned diced tomatoes (798 ml) - 7
  8. assorted canned beans (540 ml - red kidney, navy, baked beans, pinto, romano, black) - 14
  9. chili powder - 14 tbsp

Tasks:


  1. dice all onions
  2. wash and chop celery
  3. peel, wash and chop carrots
  4. wash, seed and dice green peppers
  5. mince garlic
  6. brown ground beef with 4 diced onions, 1/3 of celery, 1/3 of peppers, 1/3 of chili powder and 1/3 of garlic and set aside
  7. saute remaining onions along with other vegetables including carrots 
  8. when onions are lightly browned and other veg soft add chili powder and dry fry for a bit until the mixture is aromatic 
  9. add one can of tomatoes and cook until mixture is thick (let some of tomato juice evaporate)
  10. add remaining cans of tomatoes and beans
  11. let simmer for a bit to allow flavours to mingle
  12. split two thirds of the chili between two lasagna pans
  13. add meat mixture to remaining chili still in pot, cook for a bit to integrate flavours and then put into final lasagna pan

Side Dishes

We are going to prepare a big, yummy, colourful salad to accompany the chilli as well as corn bread. Here are the ingredients:


  1. heads of lettuce - 6 (or packaged equivalent)
  2. carrots - 3 lbs 
  3. radish bunch - 3
  4. bell peppers - 4 or 5
  5. salad dressing 475 ml bottle - 5-6 assorted kinds
  6. cornmeal - 6 cups
  7. flour - 6 cups
  8. white sugar - 1 1/2 cups
  9. baking powder - 10 tsp
  10. salt - 2 tsp
  11. egg - 6
  12. oil - 1 1/2 cup
  13. milk - 6 cups

Tasks

Salad

  1. rinse, spin and shred lettuce
  2. peel, wash and grate carrots
  3. wash, top and tail and slice radishes
  4. wash, seed and slice peppers
  5. combine in two giant lasagna pans

Corn Bread


  1. In a bowl mix ingredients 6-10 until blended (with a fork is fine)
  2. In a separate bowl mix remaining ingredients
  3. Prepare two small pans (grease well)
  4. Mix wet ingredients into dry and blend well so that there are no lumps
  5. Pour half of the batter into each pan
  6. Bake at 400 degrees until light brown on top

  10. 6 heads of lettuce (or package equivalent)
  11. 5 lbs of carrots
  12. 3 bunches of radishes
  13. 4 or 5 bell peppers (red, orange, yellow)
  14. 475 ml bottle of salad dressing - 5 or 6 different kinds
  15. ~800 gm cornmeal (6 cups)
  16. ~870 gm flour (6 cups)
  17. ~300 gm white sugar (1 1/2 cups)
  18. ~ 50 gm baking powder - 10 tsp
  19. 6 eggs
  20. ~1.5 L milk - 6 cups
