December 22, 2019 - dinner and December 23, 2019 - breakfast


Breakfast

For breakfast on December 23, 2019 we will prepare ~25 breakfast sandwiches each consisting of an English muffin, round of baked egg and piece of ham/bacon. These will be individually wrapped in foil and placed into a pan for easy heating and distribution. We will also be preparing the french toast casserole which will be baked the next day.

Ingredients for breakfast sandwiches

  • english muffins - 30 (probably only available in packages of 6 so 5 packages)
  • eggs - 36
  • whole milk - 3.5 cups (about 800 ml)
  • cheese - mild (swiss, edam, mild cheddar) - 3 cups - about 400 gms
  • 'round' ham slices - 25

Ingredients for baked french toast

  • 3 loaves of stale, plain bread (i.e. white, sourdough, french bread)
  • eggs - 24
  • whole milk - 6 cups (about 1.5 liters)
  • heavy cream - 1.5 cups
  • vanilla (Susan will bring)
  • sugar (should be in cabinet at kitchen)
  • icing sugar (1 cup) bulk barn or Save On
  • 24 sausages (beef, pork or mix of both)

Dinner

For dinner on December 22, 2019 we will be preparing a big pot of hearty beef stew (to be served with garlic bread) and for the vegetarians we will prepare 8 bean and cheese burritos (to be served with spanish-y rice).

Ingredients for beef stew, burritos and spanish rice

  1. 4 lbs of stewing beef
  2. 9 medium onions
  3. 3 lbs of carrots
  4. 5 lbs of potatoes
  5. 1 package (750 gm or 1 kg gm) frozen peas
  6. 1 package (750 gm or 1 kg gm) frozen corn
  7. 1 c flour (Susan will bring)
  8. 1 liter of beef stock
  9. 3 cups of rice (Susan will bring)
  10. 2 cups grated carrots (Susan will bring)
  11. 1 398 ml can of diced tomatoes
  12. 2 peppers (red, yellow orange)
  13. package of 8 cheese and bean burritos - 1 (already purchased)
  14. 1/2 lb of cheddar cheese 

Tasks for beef stew:


  1. cut meat into cubes


Tasks for spanish-y rice:


  1. peel and cut potatoes
  2. peel, wash and chop carrots
  3. wash and chop zucchini
  4. finely chop rosemary
  5. toss the potatoes with salt, pepper and olive oil 
  6. put half on roasting pan
  7. add chopped rosemary to the remaining half of the potatoes
  8. put the remaining potatoes on pan
  9. put both pans in the oven
  10. toss carrots and zucchini with salt, pepper and olive oil
  11. put on pan and roast in the oven
  12. after cooking carrots and zucchini put into giant lasagna pan
