February 23, 2020 - dinner

For February 23, 2020 we will be preparing 2 giant lasagna pans of stirfried vegetables accompanied by 1 small pan of stirfried teriyaki (?) chicken and 1 small pan of stirfried tofu (or maybe crispy oven baked tofu).

Ingredients for stirfried veggies:

  1. 5 lbs of carrots - 1
  2. red, yellow and orange peppers - 2lb bag - 1
  3. sui choy - 2 heads
  4. cauliflower or broccoli (based on price) - 3 heads
  5. celery - 1 bunch
  6. medium onion - 6
  7. 1 bulb of garlic

Tasks:

  1. slice onions and dice garlic
  2. saute in oil
  3. peel, wash and chop carrots
  4. wash, seed and slice peppers
  5. rinse and cut sui choy
  6. wash and cut cauliflower and/or broccoli into florets
  7. add veggies and stir until just cooked (they will cook some more when reheated)
  8. put into giant lasagna pans

Ingredients for stirfried chicken:

  1. boneless, skinless chicken breasts - 6 lbs
  2. thumb sized piece of ginger - 2
  3. bulb of garlic - 1 
  4. medium onions - 3
  5. teriyaki sauce - 1 bottle

Tasks:

  1. slice onions and dice garlic
  2. saute in oil
  3. slice chicken thinly
  4. add chicken and cook until browned
  5. stir in teriyaki sauce and heat through
  6. put into giant lasagna pans

Ingredients for stirfried tofu:

  1. 4 lbs tofu (extra firm)
  2. thumb sized piece of ginger - 2
  3. bulb of garlic - 1 
  4. medium onions - 3
  5. teriyaki sauce - 1 bottle

Tasks:

  1. slice onions and dice garlic
  2. saute in oil
  3. slice tofu into cubes
  4. add tofu and cook until browned
  5. stir in teriyaki sauce and heat through
  6. put into giant lasagna pans

Side Dishes

We are going to prepare rice to go with the stirfried veggies, tofu and chicken

  1. 15 cups of rice

  1. cook rice
  2. put into giant lasagna pan

  4. cauliflower or broccoli (based on price) - 3 heads/bunches
  5. 1 bunch celery 
  6. 12 medium onions
  7. 3 thumb-sized pieces of ginger
  8. 3 bulb of garlic
  9. 6 lbs boneless, skinless chicken breasts - 6 lbs
  10. 6 lbs of extra firm tofu
  11. 3 kg basmati rice (about 15 cups)
  12. teriyaki sauce - 2 bottle
