For breakfast on December 23, 2019 we will prepare baked french toast and sausages.Ingredients for pancakes, fruit salad and baked goods
- 1 batch of 10-12 pancakes - 6 (looking for volunteers)
- apples - 20
- pineapple - 398 ml can - 6
- mandarin oranges - 398 ml can - 6
- canned plums - 398 ml can - 3
- yogurt - 100 gm - 24
- loaf of banana bread - 3 (Susan will bring 1 or 2)
- muffins - 24 (looking for volunteers)
- other baked goods - (looking for volunteers)
Dinner
For dinner on December 23, 2019 we will be preparing 1 giant lasagna pan of smokies. We still need to figure out the vegetarian optionIngredients for smokies
- 6 packs of smokies - 8
Tasks:
- roast smokies on a baking pans
- arrange in lasagna pan after cooking
Side Dishes
We are going to prepare mashed potatoes as well as roasted zucchini and carrots- potatoes - 15 lbs
- butter - 1 lb
- milk - 1 litre
- carrots - 5 lbs
- zucchini - 5 lbs
- olive oil
Tasks
- peel and cut potatoes
- boil potatoes
- after cooking, drain, mash, mix with ingredients (Jane in charge) and put into giant lasagna pan
- peel, wash and chop carrots
- wash and chop zucchini
- toss carrots and zucchini with salt, pepper and olive oil
- put on pan and roast in the oven
- after cooking carrots and zucchini put into giant lasagna pan
Vegetarian Option
For December 23, 2019 we will be preparing 2 giant lasagna pans of vegetarian lasagna and, depending on if it is required at least 1 additional small pan of special dietary need lasagna (gluten free, vegan). Although we are calling this lasagna it is actually uses pasta rather than lasagna noodles (less expensive and less fiddly). This is a substantial and flavourful lasagna using lots of cheese (cottage cheese, cream cheese and mozzarella).Ingredients for 2 giant pans of 'regular' lasagna (veg and non-veg):
- 900 gram packages of pasta (penne, fusilli, rotini) - 2
- 675 gm of cream cheese - 1
- 675 gm of mozzarella cheese - 1
- 500 gm of cottage cheese - 2
- medium sized onion - 4
- eggs - 2
- 640 ml jar/can tomato sauce - 4
- spinach bunch - 2 (or packaged equivalent)
Tasks:
- dice all 4 onions
- grate mozzarella - set aside 1/2 of the mozzarella
- soften cream cheese
- cook and drain pasta (it will continue to cook in oven so it can be a bit underdone)
- prepare pans (grease)
- rinse and spin spinach (if using bunches)
- create cheese mixture - mix softened cream cheese, 1/2 of the grated mozzarella, cottage cheese and 4 diced onions
- assemble 2 pans of lasagna (see below)
- cook for 40 minutes and then remove foil and cook for 10-15 more minutes
Assemble Lasagna
- pour one jar of tomato sauce into prepared pan
- add a layer of cooked pasta
- add a layer of spinach
- add a layer of cheese mixture
- repeat 2-4
- add a final layer of pasta
- sprinkle mozzarella on top
- pour over enough tomato sauce to cover the pasta (so that it won't burn)
- cover with tin foil

- 6 398 ml cans of pineapple chunks or tidbits (not crushed) in juice
- 6 398 ml cans of mandarin oranges in juice
- 3 398 ml cans of plums (probably cannot find in juice so light syrup is okay)
- 24-30 individual 100gm containers of yogurt or equivalent quantity in larger containers
- 3 loaves of quick bread (i.e. banana bread, zucchini loaf)
- 24 muffins
48 smokies (already purchased)- 15 lbs of potatoes
- 1 lb of butter
- 1 litre of milk
- 5 lbs of carrots
- 5 lbs of zucchini
- olive oil
